    Plum Cake

    Plum Cake

    This recipe is originally from my elder sister!

    Ingredients:
    • 1kg Maida
    • 1Kg Eggs(approximately 15-18 eggs- if eggs are small 18 if they are large then 15)
    • 1Kg Sugar(powder it in the mixie with a stick of karuva patta and if you have an sieve(arapa) sieve it)
    • 1Kg SoftButter
    • 4-5 tsp of vanilla essence
    • 2 tsps of baking powder
    • 2-3 tsp of color(usually black color)
    • 1 cup of cherries
    • 1 cup of raisins
    • 1 cup of cashewnuts

    If you dont have cashewnuts just stick to cherries and raisins. If you like other fruits you can substitute instead of cashewnuts cut almond pieces. Some people add walnuts , pitted dates, dried prunes so if you like your cake to be more fruity you can add all these.

    Method:
    Prerequisites:
    • Dice the fruits, add rum and mix well. Keep this at room temperature over night.
    • Crush the nuts into small pieces

    • First seperate the egg white and the egg yolk and beat them separetly. Egg yolk till it gets a nice froth and egg white till it becomes stiff. Keep them in separate bowls.
    • Now cream butter and sugar together till it becomes a smooth paste( you should not feel the rough texture of sugar in the paste).
    • Then add the egg yolk to the mix. Then add the maida powder slowly and fold in the egg white .
    • Cream all of this together again till you get a smooth paste.
    • Then add the baking powder and the essence , color and again cream the whole mix.
    • Now add the fruits that are soaked in rum.
    • Cream again.
    • By now your whole mixture should resemble a lovely cream mixture.
    • Now pour in baking tray and bake at 275 degree for nearly 45 min - 1 hr.


    Please check the cake periodically to see how far it has baked. Baking time depends upon the thickness of the pan. Pass a tooth pick thru the center of the cake - if it comes clean your cake is cooked if not you still need to cook it.

    This cake can be wrapped in wax paper and stored.
