1/2 cup CSR* Brown Sugar, firmly packed
1 tspn MASTERFOODS* Cinnamon Ground
2 Eggs
3/4 cup Orange Juice (Grocery)
375 g SUNBEAM* Mixed Fruit
3/4 cup FARMLAND* Self Raising Flour
3/4 tspn MCKENZIE'S* Bi-carb Soda
1/2 cup LOWAN* Rolled Oats
120 g Butter, softened
Custard, for serving
1. Pre-heat oven to 170?C fan-forced+. Place fruit and juice in microwave-safe bowl and cook in microwave, covered, 3 mins on HIGH (100%). Cool slightly.
2. Beat butter and brown sugar with electric beaters until pale and creamy. Add eggs one at a time. Stir in fruit, sifted flour and bi-carb soda, oats and cinnamon. Mix well.
3. Spoon mixture into 8 x 3/4 -cup-capacity lightly oiled muffin pans. Cover with foil and bake 20 mins or until skewer inserted into middle of puddings comes out clean. Stand 5 mins before turning out of pans. Serve warm with custard.
