Christmas Pineapple Pudding Cake recipe
Ingredients
1 cup flour
2 eggs
1/4 cup water
a pinch of salt
1 tsp pineapple essence
1 small can of pineapple pieces
1 cup sugar.
For icing:-
2 drops red colour
1 small pkt Gems
21/2 cups of fresh cream
1 small pkt silver balls
3 cups of icing sugar.
Preparation
Prepare a cake tin, greasing and dusting it. Sieve the flour and salt twice. Beat the eggs for about 6 minutes till a good froth is obtained. Add sugar and beat it again till light. Add the flour to the egg and sugar mixture. Add water and essence so that the batter is of dropping consistency. Cut or chop 3-4 pieces of pineapple and mix them with a little flour and add to butter. Pour batter into the prepared cake tin. Bake at 375degree F for about 15-20 minutes or till light brown and firm to touch. Remove from oven and cool. For icing:- Sieve icing sugar twice and then cream, sugar and cream. Add essence and colour (optional). Dissolve 2 tbsp of sugar in 1/4 cup water and pour spoon by spoon onto cake. Cut the cake horizontally into 2. Spread 1/2 cup of the cream mix as a filling between the halves. Now on the top spread 1/2 cup cream smoothly. Add colour in 1/2 cup cream and decorate the cake with pineapple pieces, Gems and silver balls and coloured icing.
