Special Ghee Rice
Usually taken with non-vegetarian side dishes, ghee rice is a semi-biryani. Rich with ghee-roasted spices and topped with nourishing coconut milk, this special dish is an ideal choice for all festive occasions. Why not try it out during this Easter?
Ingredients
01. Biriyani or jeera rice – 3 cups
02. Cloves – 6
03. Cinnamon – 2" piece
04. Cardamom – 6
05. Coconut milk – 6 cups, from 1 coconut
06. Ghee – 3 dsp
For the ground paste
01. Dry red chillies – 4
02. Coriander powder – 1 tsp
03. Ginger, garlic paste – 1 tsp
04. Small onions – 10
05. Cumin Seeds - ½ tsp
06. Cloves – 4
07. Cinnamon – 1” piece
08. Oil - ¼ cup
09. Lime juice - ½ a lime's juice
10. Big onions sliced – 2
11. Saffron – a pinch dissloved in 1 tsp milk
12. Salt – to taste
Preparation
01. Grind ingredients 1-7 to a fine paste.
02. Mix it with the coconut milk, strain and keep aside.
03. Heat a pan and saute ingredients 2 - 4 in ghee
04. Add the rice and fry till it is slightly brown.
05. Add the coconut milk and salt to taste. Cook till done.
06. Heat a pan and fry the sliced onions in oil and keep aside.
07. Grease the bottom of a vessel with ghee.
08. Transfer the rice to the vessel sprinkling lime juice over it.
09. Add the saffron.
10. Cover the rice with a wet cloth. Bake in an oven 3500 F for 30 minutes.
11. Garnish with fried onion. Serve hot.
