Tomato Rice
Ingredients
Basmati rice - 2 cups
Salt - to taste
Whole spices - 1 tbsp
Water - 3 cups
Ghee - 3 tbsp
Mustard seeds - a pinch
Urad dal - I tsp
Curry leaves - a few
Tomato puree - ½ cup
Chilly powder - a pinch
Dry red chillies (whole) - 3
Preparation
1. Wash and soak the basmati rice in water, drain and keep aside.
2. Heat the ghee in a thick bottomed pan and add the mustard seeds. When they splutter, add in the dried red chillies, curry leaves, roasted dal and keep stir frying.
3. Now for the tomato puree, chilli powder and water. Allow to boil.
4. Add the basmati rice and cook on a low flame. Remove from stove, cover and keep aside for ten minutes, till the rice becomes fluffy and soft.
Serve steaming hot with some salad and pappad! That was fast, wasn’t it?
