    Pressure Cooker Chicken Biriyani

    Ingredients for Pressure Cooker Chicken Biriyani Recipe
    Rice - 3 cups
    Chicken - 1/2 kg
    Onion - 4 nos
    Tomato - 4 nos
    Curd - 1/2 cup
    Mint leaves(Pudhina) - 1/2 bunch
    Coriander leaves - A bunch
    Turmeric powder - 1/2 tsp
    Cloves(Grambu) - 4 nos
    Cardamom(Elakka) - 4 nos
    Cinnamon(Karugapatta) - 1" stick
    Ginger paste - 2 tsp
    Garlic paste - 2 tsp
    Cashewnuts - 10 nos
    Poppy seeds(Khashakhasha) - 1 tbsp
    Vanaspati(Dalda) - 1/2 cup
    Green chillies - 6 nos
    Salt - As reqd


    Preparation Method of Pressure Cooker Chicken Biriyani Recipe
    1)Soak rice in water for 15 mins and then drain.

    2)Fry the rice and keep it aside.

    3)Heat dalda in a pressure cooker.

    4)Fry the onions, spices, tomato, ginger paste, garlic paste, green chillies, coriander leaves, mint leaves and turmeric powder, until the oil comes on top.

    5)Grind together cashews and poppy seeds.

    6)Mix the cashew-poppy seeds paste with the curd.

    7)Add the chicken and curd mixture into the masala and mix well.

    8)Add enough salt to it.

    9)On top of this, spread the rice and add about 5 cups of water.

    10)Cover and cook with the weight on, until you hear 1 whistle.

    :- Add 4 1/2 cups of water, since the water comes out from chicken, tomato, etc.

    Chicken Briyani Dum Style
    Ingredients for Chicken Briyani - Dum Style Recipe
    Onions (big size) - 6 nos
    Tomatoes (medum size) - 5-6 nos
    coriander leaves - big bunch (approx 1/2 cup)
    Mint leaves - 1 big bunch
    (approx 1 cup)
    Ginger garlic paste - 2 tbsp
    Red chilli powder - 3/4 tsp
    Turmeric powder - 1/4 tsp
    Cardamom - 5 nos
    Aniseeds - 1/4 tsp
    Kalpasi - 1 piece
    Bay leaves - 1 no
    Cloves - 5 nos
    Cinnamon - 1 big piece
    Ghee - 2 tsp
    (to fry rice)
    Oil - 10 tsp
    Salt - to taste.
    Water - as reqd
    Coriander powder - 1/4 tsp
    Red chilly powder - 1/4 tsp
    Chicken - 3/4 kg
    Basmati rice - 2 cups
    (2- 8 oz cups)

    Preparation Method of Chicken Briyani - Dum Style Recipe
    1)Heat the ghee and then add the washed and drained rice and fry lightly.
    :-Don`t stir it too much because the rice breaks off.

    2)Fry for about 3 mins or so and keep it aside.

    3)Heat oil in a deep non stick pan and add cardmom, aniseeds, kalpasi, bay leaves, cloves, Cinnamon and fry lightly.

    4)Now add the ginger garlic paste and fry it till all the raw smell goes and it turns light golden brown.
    :- Make sure you don`t burn it. Watch out as this may splatter so much. put it in slow heat when you`re frying this to avoid splattering.

    5)Add the sliced onions (save a few for the chicken) and fry till golden brown.

    6)Add the cut mint and coriander leaves and fry it.

    7)Add tomatoes and fry it till oil separates.

    8)Add red chilly powder and fry it.

    9)Add about 5 cups of water and bring it to a boil.

    10)Add fried rice and put the flame in medium slow and put a tava (thick stone kind) and the flame and put this dish on top of it.

    11)Close the dish and cook it for about 20 minutes, the rice would be ready.

    12)For cooking chicken take a pan and put oil in it and then fry few onions.

    13)Add red chilly powder, coriander powder and chicken.

    14)Add water and cook it for about 15 -20 mins and keep it in low flame till all the water is drained.

    15)Add this to rice

    Mutton Briyani
    Ingredients for Mutton Briyani Recipe
    Mutton - 1/2 kg
    Curd - 200 gm
    Onion(medium) - 2 nos
    Onion(mdium) - 3 nos for frying
    Tomato(medium) - 3 nos
    Ginger-garlic paste - 1 1/2 tsp
    Coriander leaves - 1 cup
    Mint leaves(Pudhina) - 1/2 cup
    Garam masala - 1 tsp
    Red chilly powder - As reqd
    Salt - As reqd
    Basmati rice - 3/4 kg
    Whole garam masala (taste)
    Oil

    Preparation Method of Mutton Briyani Recipe
    1)Marinate for 2 - 3 hrs the mutton with curd, onion, tomato, coriander leaves, pudina, garam masala powder, ginger-garlic paste, turmeric powder, red chilly powder, salt(accordingly), 1/3 of fried onions, 1 tbsp of very hot oil.

    2)Heat oil in a kadai.

    3)Add all whole garam masala like cloves, cinnamon, cardamom and bay leaves qty according to ur choice.

    5)After some time when oil is very very hot, pour water.

    :- If the qty of rice is 4 glasses, then add 4 glasses of water.

    6)Allow it to boil without lid.

    7)Let all the water get soaked.

    8)At the end, the rice will be half cooked.

    9)Heat oil in a big cooker.

    10)Add the marinated mutton followed by the rice.

    11)Keep the cooker on high flame for 10 mins and on low flame 10 mins.

    :- Totally avoid whistle. Cooker should be properly closed.

    12)Garnish with fried onion, coriander leaves, pudina leaves, saffron mixed in milk/water(for colors and smell) and ghee.

    13)Sprinkle some milk at the end for moisture.
