    Prawn in sauya sauce

    500 gms king prawns.
    1 egg white.
    1 tsp each of minced garlic,
    chilli, ginger and
    chilli oil.
    1/2 cup olive oil.
    1 tbsp each soya sauce
    and plain flour.
    1 cup water.
    Salt and pepper to taste.
    2 tbsp cornflour. Preparation
    Clean and devien prawns. Leave
    the tail intact. Marinate prawns
    with salt, egg, flour and
    cournflour.

    In a pan. heat oil, deep-fry
    prawns until golden brown, and
    drain. Retain a quarter of the
    oil, discarding the rest. Saute
    garlic, chilli and ginger. Add
    prawns, soya sauce and chilli
    oil. Keep stirring, add water,
    salt and pepper, bring to boil.
    Keep the heat high, add remaining
    cornflour and stir continually
    for a few mnts. Remove from heat.

    Note: Just before serving, garnish
    with chopped spring'
    onions.
