    Chicken Cashew Curry

    Ingredients
    1 kg chicken, cut
    into eight pieces.

    600 gms cashew
    nuts.

    200 gms green
    peas.

    300 gms onions,
    sliced.

    12 green chillies,
    diced.

    12 cloves garlic,
    sliced.

    1 pinch each, clove
    and cardamom powder.

    2 springs curry leaves.

    1 pandanus (rampe)
    leaf..

    10-cm piece of
    cinnamon.

    1 tsp turmeric
    powder.

    3 tsp curry powder.

    2 cups thin coconut
    milk.

    3 cups thick coconut
    milk.

    1 tsp mustard paste.

    2 tsp fenugreek.

    Salt & pepper, to taste.

    3 tbsp oil.

    Preparation
    Marinate chicken with salt
    and pepper, and keep aside.
    In a pan heat oil and add
    fenugreek, onion, green chilli,
    garlic, clove and cardamom
    powders, curry leaves and
    rampe. Cook till the mixture
    turns golden brown in colour.
    Add cinnamon, turmeric powder,
    mustard paste, thick coconut
    milk and curry powder. Once
    the mixture begins to boil, add
    chicken, peas and thin coconut
    milk, and cook till chicken is
    almost ready. Then add cashew
    nuts and cook for a few more
    minutes.
