Burmese Kusmi
Ingredients:
Boneless Chicken - 1 kg cut into medium sized pieces
Ginger - 1 piece
Garlic - 4 cloves
Fried garlic pieces - 1 tsp
Onion - 1 large
Chllipowder - 3 tsp
Coconut milk - 4 cups (1 cup very concentrated and 3 cups less concentrated)
Boiled egg - 1
Noodles - 1 small packet
Spring onion - 1/4 cup
Kadala maavu(Besan flour) - 1 tsp
lemon juice - 2 tsp
Salt - to taste
Method:
1) Boil the noodles with a little salt,dry it and fry in oil.
2) Fry the garlic pieces
Keep thiese things aside.
Now we will make the chicken curry for kusmi:
3) Make a paste of onion+ginger+non fried garlic
4) Take a big pan and fry oil and fry the paste in (3) till light brown
5) Add the chicken and salt to taste into the fried masala and saute for 2 minutes.
6) Pour 1/2 cup of water
7) Now add the less concentrated coconut milk (3 cups)to it and let the chicken boil.
8) By this time take another small pan and heat the chillipowder without any oil(basically onnu mooppikkuka). (Ee samayam nannayi thummal undakum. Karyam aakkanda.)
Add the heated(mooppicha) powder to the boiling chicken curry.
9) Also mix the kadla maavu and concentrated coconut milk and add to the curry and boil for another 2 minutes.
Now the chicken curry for the kusmi is ready.
Then take noodles in a plate, pour the curry, add fried garlic, spring onion and lemon juice and now you get Burmese kusmi
