Coriander Chicken
One of my fav dish. Itz similar to chicken masala. Cooking time would be at least 25 mins.
Ingredients
750g chicken, skinned and cut into pieces
1tsp chilli powder
1 tsp salt
250ml (1 cup) plain yoghurt
2 tbsp oil
3 large onions, finely chopped
2 tbsp ginger paste
2 tbsp garlic paste
5 green chillies, finely chopped
2 tbsp ground coriander
1 tsp cumin powder
200g fresh coriander, finely chopped
100g mint leaves, finely chopped
Method
Mix the chicken with the chilli powder, salt and half of the yoghurt. Marinate for 15 mins. Reserve the remainder of the yoghurt for later use.
In a large saucepan, heat the oil and fry the onions until transparent. Then add the ginger and garlic paste. Fry until fragrant. Then, Add the green chillies, coriander and cumin powders, stirring well into the onion mixture.
Drain the chicken pieces and add to the spice paste and fry well on a high flame for 5 mins. Stir constantly to prevent sticking and burning.
After that, scrape the leftover marinade from the bowl and pour into the cooking chicken pieces. Also add the remaining half cup yoghurt, the chopped coriander and mint leaves and mix well.
Bring to the boil, cook on low flame until chicken pieces are done.
