AMERICAN CHOPSUEY
Ingredients
Ingredients to make noodles
Crispy Egg Noodles Readymade – 100 gms
Water – 10 Cups
Oil - 1 Tbsp
Corn Flour – 1 Tbsp
Salt – 1 Tbsp
Ingredients for Chopsuey
crispy noodles
shredded chicken meat - 150 gms
prawns cleaned – 100 gms
carrot cut into thin long pieces - 1
beans cut into thin long pieces - 15
cauliflower cut into flat pieces – ½ cup
mushrooms sliced – ½ cup
spring onions chopped - 3
small cabbage shredded – ¼
green chillies chopped - 5
celery chopped - 1 stem
stock – 1 cup
cornflour I tbsp mix with water 2 tbsp
2 eggs for garnish
tomato ketchup - 4 tbsp
ajinomoto – ¼ tsp
pepper powder – ½ tsp
oil - 6 tbsp
salt to taste
Preparation
Method to make Crispy Egg Noodles
With 10 cups of water cook the noodle in high flame. Mix salt into it. Boil until 75% is cooked. Drain and add 1 tbsp oil. Cool it and mix the corn flour. Heat the oil very well in a pan and deep fry the noodles. Turn over the noodles until it is light brown. Remove it then and drain it.
Method for Chopsuey
1. Prepare crispy noodles as explained above and keep aside.
2. boil all the vegetables, except mushrooms, Spring Onion, celery and green chillies in enough water just to cover the vegetables. Add a pinch of salt and sugar. Boil it for 1 minute and drain it.
3. Heat oil, stir fry the spring onion, celery and green chillies for 5 seconds. Then add the shredded chicken, prawns and fry for another 5 mts. Add the mushrooms, cauliflower and the remaining vegetables, pepper, ajinomoto, salt, tomato ketchup and stock. Bring to a boil and stir well. Add the corn flour mixed with water, stirring until thickened.
To Serve, Put the crispy noodles at the bottom of the plate and top with chicken and vegetable mixture, or serve the crispy noodles side by side with the chicken and vegetable mixture.
Garnish with 2 fried eggs(fry the eggs like the way u make bull’s eye(half boil) but fry both the sides) in the centre.
