INGREDIENTS:
1 Cup Channa Dal Flour (Sieved);
1 Cup Water;
2 1/2 - 3 Cups Sugar;
Ghee 2 1/2 cups;
Elaka Powder ½ Tbspn.
METHOD:
Heat 1 tbspn of Ghee & fry the Channa Dal Flour for about 5 mins. Stir continuously it gives out a nice aroma & the flour turns golden brown. Remove from fire & let it cool. Now place a Wok on the fire, add the Sugar & water & make syrup of single thread consistency. Then add one cup of Ghee, stir well, and add the flour sprinkling it little by little, stirring continuously to avoid formation of lumps. When the flour & syrup mixture is smooth and even, add the remaining Ghee little by little, stirring all the time ( for about 15 mins), till the mixture froths & bubbles up. The Ghee will start to seep out. Remove from heat when the mixture is no longer sticking to the sides of the Kadai and pour immediately onto a greased tray (you can use the ghee which seeps out from the mixture for the tray) & evenly level it out with a buttered spatula. Cut into pieces while still warm. let it cool down. When cold, place in airtight containers & use.
