ORANGE CHEESE CAKE
Ingredients
Butter- 7 tbsp
Lime - 5
Orange - 1
Vanilla wafers - 250 gm
Cream cheese softened - 1 kg
Granulated sugar - one and a half cup
Salt - quarter tsp
Eggs - 4
Creamy yoghurt - 225 gm
Orange juice - quarter cup
Orange and lemon slices ? for decoration
Method: Preheat oven to 175?C. Grate 1 tbsp of lime peel and keep aside, grate another 2 tsp peel and squeeze half a cup of lemon juice. From the orange, grate half tsp peel and squeeze half cup of juice. Place vanilla wafers and lime peel in a food processor and make fine crumbs. While oven preheats, melt butter in a tin. Stir ingredients into melted butter in tin, then press on to bottom and 2 inches upside of tin to form crust. Bake crust 15 minutes. Cool completely in pan on wire track. In a large bowl, with mixer at medium speed, beat cream cheese until smooth, occasionally scraping bowl with rubber spatula. Gradually beat in sugar and salt until blended. At low speed, beat in eggs one at a time, sour cream, orange juice, orange peel, lime juice and remaining lime peel just until blended and smooth. Pour cream cheese mixture into batter. Bake for 45 minutes. Turn oven off and leave the cake in oven for an hour to cool completely in tin on wire rack. Garnish with orange and lemon slices.
