    REEL COOKIES

    Ingredients

    Maida - 175 gm

    Baking powder - half tsp

    Caster sugar - 60 gm

    Butter - 100 gm

    Salt - a pinch

    Egg yolk - 1

    Lemon rind - 1 tsp

    Method: Cream the butter and castor sugar in a bowl until light and fluffy. Add egg yolk and lemon rind. Sift the flour, baking powder and salt, and blend with a spoon. Then work by hand to get dough consistency. Knead lightly till smooth. Chill for half an hour. Grease baking sheet and rollout the dough on a floured surface to 1/8" thick. Take an old bobbin, grease lightly with oil and press it firmly into the dough to create a pretty pattern. Place slightly apart on baking sheet, refrigerate for 25-33 minutes. Preheat the oven to 160?C. Bake the cookies for 25-30 minutes until lightly coloured. Remove from baking sheet on wire rack to cool.
