    White Chocolate Truffles

    WHITE CHOCOLATE TRUFFLES

    Ingredients:

    * 120 gms white chocolate, broken into small pieces
    * 4 tbsp butter, softened to room temperature
    * 2 tbsp double cream
    * 1/2 tsp brandy
    * grated white chocolate, to decorate

    Method:

    Put the chocolate pieces into a heatproof glass bowl and place over a pan of hot but not simmering water. When it starts to melt, stir gently until completely melted. Do not overheat, or the chocolate will separate. Remove from the heat and gently stir in the butter, then the cream and brandy. Leave to cool, then cover with clingfilm and refrigerate for 2-2h hours until set.

    Remove the chocolate mixture from the refrigerator. Using a teaspoon, scoop out small pieces of the mixture, then use your hands to roll them into balls. To decorate, roll the balls in grated white chocolate.
