CRAB CURRY
4 large crabs.
100 gms red onion, sliced.
2 green chillies, chopped.
3-1/2 tbsp roasted curry powder.
2 tsp turmeric powder.
½ tsp chilli powder.
1 tsp fenugreek.
2 pieces gamboges,chopped.
1 spring curry leaves.
2 cups water.
4 cups thick coconut milk..
½ tsp mustard powder.
juice of one lime.
Salt & pepper, to taste
Preparation Method
Clean crabs and divide each into 4 pieces. Place into large pan, add all ingredients except coconut milk, mustard powder, lime juice and salt.
Bring to a boil, add coconut milk and allow to simmer for 10 minutes. Add lime juice, mustard powder and salt. Stir for a few minutes until flavours are married. Remove from heat and serve hot
