Schezwan Fried Rice
Ingredients:
Rice-11/2 cups(onnara)
Eggs-2
Chilly oil-4tbsp
Chicken pieces-1/2 cup
(Prawns)
Carrot-1/2cup
Beans-1/2cup
Capsicum-1
Green peas-1/4 cup
Spring onion-1/2cup
Cellary-2tbsp
Ginger-1 tsp
Garlic-1tsp
Soyasauce-1/2 tbsp
Vinegar-1/2 tbsp
Lime juice-1tbsp
Salt or Agenomotto-to taste
Cook the rice:
Method:
First soak the 11/2 cup rice in water for about 20 min exact .Then drain it .meanwhile you can boil 3 cups of water in a container along with some salt .When the water boils put rice into it and when it boils again put a tight lid over it and then sim the fire and after exact 10mins switch off the stove and keep with lid on for about 5 min exact. Then remove rice spread it in a tray. Put little chilly oil over the rice.
Fried rice:
Marinate the chicken in 1tbsp limejuice and keep aside .Heat little oil and scramble eggs keep aside. Heat some oil stir fry the ginger and garlic add chicken/prawns stir fry add veg. and stir fry+little cellary.Heat non-stick pan/kadai,pour a little oil add ? of the rice sprinkle spring onion and cellary, little agenomotto. After 2 mins add chicken veg mixture and1/2 of the seasoning (soya sauce) stirs and then removes. Repeat the same with the remaining rice.
Chilly oil:
Heat oil, add ginger paste. Add chilly powder after switching off the burner. With a piece of cloth drain the chilly oil.
