    Caramelised Sugar Cake

    CARAMELISED SUGAR CAKE



    Ingredients:

    * Self Raising flour ? kg
    * Powdered Sugar ? kg
    * Egg ? kg OR 4 large eggs
    * Unsalted butter ? kg
    * Cardamom, Cinnamon, Cloves and Nutmeg powdered -1 tbsp
    * Caramelised sugar ? cup
    * 1 teaspoon vanilla essence
    * Pinch of salt

    For Caramelised sugar:
    * ? cup sugar
    * 1/3 cup hot water
    Place the sugar into a heavy vessel on medium heat, stirring constantly with a wooden spoon as sugar melts. When it turns dark brown, remove from heat, add hot water very slowly and stir until dissolved. Set aside to cool.

    For decoration:
    * Fried Cashew nuts cut into small pieces - 1/2cup

    Method:

    1.All ingredients should be at room temperature.
    2.Sift the flour, ground spices and salt three times
    3.Beat the egg whites and yolk separately and keep aside
    4.Beat the sugar and butter into smooth paste. Add egg white and yolk to this mixture
    5.Add the flour slowly. Beat until smooth. Stir in the vanilla and the sugar syrup mixture. Add the cashews
    6.Pour batter into a pre-heated pan. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
