Mutta Choru & Malabar Kozhi curry
Mutta Choru:
Ingredients:
Basmati Rice-2 cups
Eggs-5
Coconut milk-1 cup
Turmeric powder-1 pinch
Pepper powder-1 tsp
Red chilli powder-1 tsp
Green chillies-2(chopped fine)
Ghee-1 tbsp
Oil-1 tbsp
Garam Masala-1 tsp
Curry leaves-1 sprig
Parsley-as required
Salt-as required
Boiled Water-3 cup
Method
Soak the washed rice for 5 minutes.Now heat 1 tbsp ghee in a deep bottomed vessel and roast the rice till the grains become slightly soft on biting.Now add boiled water and break into it 2 eggs completely,(boil the remaining eggs and keep ready) and mix well.When the rice is half cooked add coconut milk,pepper powder and salt and cook it till it is done.Now heat oil in a wok.Add curry leaves,green chillies,red chilli powder,turmeric and garam masala.Reduce the flame to a simmer(or else chilli powder will get burnt).Saute it for a minute.Now add the boiled eggs, cut into half,to this masala.Roast it till it becomes golden.Now add these eggs along with the masala to it.Mix well.You may separate out the eggs and add them after mixing the rice well.Finally garnished with fresh chopped parsley and serve it hot with any spicy curry of your choice.
Malabar Kozhi curry
Method:
Chicken-300g
Red chilli powder-1 1/4 tsp
Turmeric powder-1/4 tsp
Onion-2 large-chopped fine
Green chilli-4 or 5
Garlic-9 cloves
Ginger-20g
Pepper powder-1 tsp
Garam masala-1 1/2 tsp(cloves,fennelseed,cardamom,nutmeg,cardamom,cin namon)
Coconut milk-1 cup(thick)
Curry leaves-2 sprigs
Oil-as required
Salt-as required
Method:
Marinate the chicken with half the quantity red chilli powder,turmeric powder and salt for 10 minutes.Pressure cook it with 2 or 3 garlic pods pounded(if u r adding potatoes,cook it along with chicken) and added to it for 2 or 3 whistles.(I microwave it at high for 8minutes).Now Heat oil in a wok.Fry the cooked chicken pieces till they are golden brown.Remove it and keep it aside.Now in the same oil sautecurry leaves,onion,ginger-garlic-greenchilli paste(coarse paste) till onions turn golden brown.Add garam masala,the remaining red chilli powder and mix well.Cook further for a couple of minutes. Now add the chicken pieces and cook for a couple of minutes.Add the coconut milk and mix the gravy well and cook for another 4 minutes.Serve it hot with rice/pathiri/porota/naan/chappathi/Puttu
