Tomato-Onion Avial Recipe
Ingredients:
Onion (preferably red) - 2 medium sized ones
Tomato - 3 nos
Cubanelle peppers - 2 nos
Drumsticks - 5 - 6 pieces
Salt - As reqd
Curry leaves
For grinding:-
Grated coconut - 1 1/2 cups
Cumin seeds(Jeerakam) - 1 tsp
Red chilly powder - 2 tsp
Turmeric powder - 1/4 tsp
1)Slice onion lengthwise. Slice tomatoes and cubanelle peppers.
:- Cubanelle peppers add a nice flavour to the dish.
2)Grind together coconut, cumin seeds, chilly powder and turmeric powder to a coarse paste adding little water.
3)Mix all the vegetables (onion, tomato, cubanelle pepper, drumsticks) with the coconut mixture.
4)Add salt and curry leaves.
5)Cook in a closed vessel on a low flame till the onions are soft and all vegetables are cooked.
:- Usually water from veggies is sufficient for cooking. If not add little water.
:- Serve with rice.
