Kerala Parotta
Maida - 2 cup
Egg - 2
Milk - 1/2glass
soad powder - 1/2 tsp or 1 tsp
sugar - little
salt - little
oil
Add oil and rest of the ingredients and water to the maida and make a soft dough. Make sure to pat the dough hard on a clean surface to make it soft. Then keep the dough covered in a wet cloth for atleast 4hrs. Once again before making the parotta mix the dough well with hands.Then on a clean surface rub oil. Make small balls of dough and roll like chapathis. Then make pleats with that as if to look like a hand made paperfan.
Then roll it holding on one end to form a round. This is done to get layers. Then roll out to make it like a chapthi.Make sure to roll out only one side with the chapthi stick. THen put this on the pan on a low flame till parotta is ready. Once done use both hands and pat on the sides of the partotts to get the layers.
