Vegetable kurma:
Ingredients
1. Onions - 2 small [chopped]
2. Tomato -1 [chopped]
3. Ginger -3/4 inch
4. Garlic -5to 6 cloves
6. Cardamom - small piece
7. Cloves -2
8. Coriander powder - 2to 3 tsps
9. Chilli Powder - 1 1/2 tsps
10. Coconut Milk - 1/2 of the fresh coconut [take milk 3times ]
11. vegetables -Carrot, Beetroot ,Cauliflower.
12. Salt as per taste
13. Turmeric powder
14. Coriander leaves
15. cooking Oil.
Seasoning:
1. Mustard seed
2. Urad dal
3. Curry leaves
Method:
First take the kadai put some cooking oil and then put cadamom, cloves, ginger and garlic fry them little bit then add chopped onions 1/2 the amount in the chopped one, fry the onions to the brownish,after that add coriander powder to it and fry them.then keep the masala aside for a minute and grind all in a blender to a smooth paste.
scrape half the coconut and take milk 3 times and keep it separately.
Cut the vegetables nicly and keep it separately
Take the kadai pour some oil as per your wish then put all the seasonings once the mustard splutters and urad dal become red colour put the remainig onions fry till golden brown and then add chopped tomato fry it nicely then add the masala and allow it to cook for 5 minutes if needed add some water to cook ,once the masala smell gone add all the cut vegetables and pour some water to cook the vegetables, and also add chilli powder, salt ,turmeric powder.
Once the vegetables got cooked add the coconut milk fully allow to boil untill the kuruma becomes thick.while removing from the fire add chopped coriander leaves. It takes approximately 45 min to cook.
It goes well with Rice, Chappathi, even for Dosa also good.
2.vegetable kurma:
Potato - 1(big), Green peas(seeds) - 1/2 cup, Turnip - 2(big), Carrot - 1(big), Tomato - 2(medium sized), Onions - 2(medium sized), Salt - 1/4 tsp, Red chilli powder - 1/4 tsp, Turmeric powder - a pich, Grated coconut - 1 cup, Fennel seeds - 1/2 tsp, Poppy seeds - 1/2 tsp.
Chop potatoes, turnip and carrot into thin long pieces. Add the green peas to this and steam the vegetables in a pressure cooker. Grind the coconut, fennel seeds and poppy seeds into a nice paste adding minimum water. Chop the tomatoes and onions and fry them in little oil. Add salt, chilli powder turmeric powder and the cooked vegetables. Add the ground paste and stir and heat for a little while.
