Pavakka pickle
Ingredients
pavakka - 1/2 kg
onion (savala) - 1 medium size
garlic - 100 gms
ginger - 50 gms
pacha mulagu - 50 gms
kayam - varuthu podichathu 1/2 teaspoon
kaduku - 1/4 teaspoon
vattal mulagu - 3 nos
apple vinegar or similar - 1/2 cup
nallenna (gingelly oil) - 4 to 5 table spoons
Eastern Pickle powder - 3 table spoons
salt - as required
curry leaves
Preparation:
Aadyamayi pavakka akathulla kuru ellam kalanju 3/4" neelathilum ulli, inchi enniva 1/2 inchu neelathilum kanam kurachu ariyanam(julian). pachamulagu chruthayi vattathilo neelathilo ariyanam.
oru frying panil 2 or 3 table spoon nallenna (gingelly oil) ozichu choodakumbol oru cheriya piece kayam ittu nallathu pole varuthu podichu vakkanam. aa frying panile bakkiyulla ennayil pavakka ittu chuvakkunnathu vare mooppichu (nalla brown color aakumbol athu) kori matti vakkanam. veendum 1 table spoon enna ozhichu athil arinju vachirikkunna ullli, inchi, pachamulgu enniva ittu ulli chuvakkunnathu vare mooppikkanam. pinneedu athinodukoodi arinju vachirikkunna veluthulli (garlic) ittu ilakkaanm.
ithodu koodi nerathe mooppichu vachirikkunna pavakka, podicha kayam, curry leaves enniva chertilakkanam. athinuseham aavasyamulla uppum, 3 table spoon Eastern pickle powderum chethlikkanam. cheru theeyil 1 minute mathi.
ippol ithil vinegar ozhikkam. athu onnu ilakkiyathinu sesham athil ingredients mungi kidakkunnathu vare thilappichariya vellam ozhikkam. ee samayam cheru theeyil irunnal mathi. ellam mix aayathinusesham thaze irakki vakkam.
thanuthathinu sesham kuppiyilakki vakkam. oru divasam kazhiyumbol fridgil sookshikkam.
