    Mixed pickle achar

    carrots 100gm (finely chopped)
    beans - 100 gms ( finely chopped0
    cauliflower 100 gms ( cut into very small florets)
    lemon juice - 2 tablsespoon
    mustard seeds - 2 teaspoon
    kayampodi - 1/2 teaspoon
    chillipowder- 1 tablespoon
    green chillies - 5-6 Nos(finely chopped)
    turmeric - 1/2 teaspoon
    ginger - 1 inch ( either finely cut lenght wise or grated)
    salt as require
    sugar - 1 teaspoon
    cornflour - 1 tablespoon

    put salt and sugar in a pan and add 250 ml of water and boil it for a few minutes

    keep the stove in low flame and stir in ginger, green chillies, turmeric, kayam and chillipwdr

    blend cornflour in a little bit of co;ld water and add to the pan with mustard. stir untli the sauce is thick. add lemon juice and remove from heat
    put the veg in another pan and add these sauce. let it cool and then put it in a bottle and close the lid
    your pickle is ready for use
