    Fennel-Orange Salad

    Fennel-Orange Salad


    Preparation Time: 15 minutes
    Marinade Time: 30 minutes
    Serves: 4

    Ingredients

    1/2 cup plus 4 Tbsps. olive oil
    1/4 cup wine or rice vinegar
    1 tsp. French mustard
    1 clove garlic, crushed
    1 tsp. honey
    salt and pepper
    1 tsp. orange zest
    1 Tbsp. orange juice
    3 Tbsps. raisins
    2 heads fennel, sliced
    3 oranges, segmented
    3 spring onions, sliced
    3 Tbsps. pecan halves
    sprigs watercress


    Instructions

    Combining first 6 ingredients in a screw-topped jar and shake well to blend. Mix together 4 Tbs of the dressing, the orange zest, and orange juice. soak the raisins in this mixture for about 30 minutes. Arrange fennel and orange segments on 4 individual plates, top with spring onions, pecans, and dressing. Spoon raisins in the center and garnish with watercress sprigs.
