    Carrot Cashew Payasam

    Ingredients


    1-1/2 cups Carrot grated
    1 1/2 litres Milk
    1/2 cup Cashewnut
    1 cup Warm Milk for soaking cashew nut
    3/4 cup Sugar
    6 Cardamom powder
    2 tablespoon Ghee

    Method:

    Soak cashewnuts in 1 cup warm milk for half an hour.
    Boil 1 1/2 litres milk in a heavy bottomed vessel and keep stirring till it is reduced to half the quantity.
    Fry the grated carrot in ghee for few minutes.
    Grind the fried carrot and soaked cashewnut to a coarse paste. Add to the milk and add sugar and simmer till everything blends well.
    Finally add the cardamom powder and serve chilled.
