    Okra curry



    You will need:

    1. 1 tsp coriander powder
    2. ? tsp chilli powder
    3. ? tsp turmeric powder
    4. ? tsp pepper powder
    5. ? tsp aniseed
    6. 1? cinnamon
    7. 2 cardamom pods
    8. 4 cloves
    9. ? cup refined vegetable oil
    10. 2 cups okra, sliced 1? lengthwise
    11. ? cup onion, sliced
    12. 1 tsp ginger, julienned
    13. 5 green chillies, half slit
    14. A few curry leaves
    15. 1? cups thin coconut milk
    16. Salt to taste
    17. Lime juice to taste
    18. ? cup thick coconut milk

    Method:
    1. Grind ingredients 1 to 8 to a fine paste.
    2. Heat oil in a pan and saute the sliced okra. Keep aside.
    3. I the same pan, add the onion, ginger, green chillies and curry leaves.
    4. Add the ground paste and saute for a while. When the oil separates, pour in the thin coconut milk and bring to oil.
    5. Add the sauted okra, salt and lime juice and simmer till the gravy thickens.
    6. Gently add the thick coconut milk. Mix well and remove from heat.
