Basmati rice - 1 cup
Capsicums - 1 1/2
Onion - 1/2
Lemon juice - 1 tsp
Salt - As reqd
Grated coconut
Coriander leaves
For seasoning:
Oil - 4 tbsp
Mustard seeds - 1/2 tsp
Bengal gram(Kadalaparippu) - 1 tsp
Black gram(Uzhunnuparippu) - 1 tsp
Turmeric powder
Cashews
Cloves(Grambu) - 2 nos
Cinnamon(Karugapatta) - 1" piece
Method:
1)Cook the basmati rice and spread over a plate. Allow it to cool.
2)Add little ghee to the rice so the grains will be separated.
3)Cut capsicums and onions lengthwise.
4)Heat oil in a pan.
5)Add all the ingredients for seasoning.
6)Add onions followed by capsicums and fry till it becomes tender.
7)Add salt and keep frying for another few minutes.
8)Add cooked rice to it along with lemon juice and mix well.
9)Finally, add grated coconut.
10)Garnish with coriander leaves.
